Chicken & Mango Salsa Rice Bowl

This dinner hits all the right notes: golden, crispy chicken with a bit of spice, sweet and tangy mango salsa, and a creamy, zesty guacamole sauce that ties it all together. Add some fluffy rice, fresh cilantro, and a squeeze of lime, and you’ve got a bowl that’s vibrant, satisfying, and full of flavor. Simple to make, big on taste, perfect for a quick weeknight dinner that doesn’t feel boring.

INGREDIENTS

  • For the mango salsa:

    • 1 ripe mango, diced

    • 1/2 red bell pepper, diced

    • 1/4 red onion, finely diced

    • Juice of 1 lime

    • Salt, to taste

    For the chicken:

    • 2 chicken breasts, cut into bite-sized pieces

    • Olive oil

    • 1/2 tsp smoked paprika

    • 1/2 tsp cumin

    • Salt & pepper, to taste

    For the guacamole sauce:

    • 1 large ripe avocado

    • Juice of 1 lime

    • 2 cloves garlic

    • 2 tbsp fresh cilantro

    • 2 tbsp Greek yogurt

    • Salt & pepper, to taste

    For the rice:

    • 1 cup cooked rice (white, brown, or jasmine), prepared your preferred way

    To finish:

    • Fresh cilantro, for garnish

INSTRUCTIONS

  1. Start by making the mango salsa: mix diced mango, red pepper, red onion, lime juice, and a pinch of salt in a small bowl and set aside.

  2. Next, make the guacamole sauce by blending avocado, lime juice, garlic, cilantro, Greek yogurt, and salt and pepper until smooth. Taste and adjust seasoning if needed.

  3. Heat olive oil in a pan and fry the chicken with smoked paprika, cumin, salt, and pepper until golden and cooked through.

  4. To assemble, divide the rice between two bowls, top with the chicken, then spoon over the mango salsa. Drizzle generously with the guacamole sauce and finish with fresh cilantro. Serve immediately and dig in!
