Creamy Broccoli Penne with Baked Salmon
Prep time : 10 minutes | Cook time : 25 minutes | Makes 2-3 servings
This creamy broccoli penne with baked sriracha lime salmon is the kind of meal that feels indulgent but still fresh and balanced. Tender penne gets coated in a rich, garlicky cream sauce made with broth, heavy cream, chili pepper, and plenty of freshly grated parmesan, while golden-seared broccoli adds texture and depth. On top, flaky salmon baked with olive oil and sriracha lime seasoning brings a bright, spicy kick that cuts through the creaminess perfectly. It’s cozy, flavour-packed, and surprisingly simple to pull together — ideal for a weeknight dinner that feels a little elevated without any extra fuss.
INGREDIENTS
For the salmon
2 salmon fillets
Olive oil
Sriracha lime seasoning (to taste)
For the pasta
300–350 g penne pasta
1 large head of broccoli, chopped small
2 tbsp olive oil
5 cloves garlic, minced
1 tsp chili flakes
½ cup broth (chicken or vegetable)
1 cup heavy cream
Salt & pepper, to taste
Lots of freshly grated parmesan cheese
Reserved pasta water
INSTRUCTIONS
Preheat the oven to 415°F (215°C). Place the salmon on a baking sheet, drizzle with olive oil, season generously with sriracha lime seasoning, and bake for about 12 minutes, until cooked through and flaky.
Meanwhile, bring a large pot of well-salted water to a boil and cook the penne until al dente. Reserve about 1 cup of pasta water, then drain.
Heat olive oil in a large pan over medium-high heat. Add the chopped broccoli and cook until it starts to turn golden, about 5 minutes. Add the garlic and chili pepper and cook for another minute, just until fragrant. Pour in the broth and heavy cream, stir, and let simmer for about 3-5 minutes until slightly thickened. Season with salt and pepper, then lower the heat and stir in lots of grated parmesan until melted and creamy.
Add the cooked penne to the sauce and toss to coat, loosening with reserved pasta water as needed. Serve with the baked salmon and finish with extra parmesan, leftover sauce from the pan, cracked pepper, or chili flakes if desired.
