Lamb Burgers with Grilled Eggplant & Herby Yogurt Sauce

A quick, easy dinner that feels a little elevated from your usual burger night. These juicy lamb burgers are packed with lemon, garlic, and fresh herbs, layered with smoky grilled eggplant, peppery arugula, salty feta, and a creamy yogurt sauce. It’s fresh, bold, and comes together fast - perfect for when you want something different without overthinking it.

INGREDIENTS

  • 400 grams ground lamb

  • 1 handful fresh cilantro, finely chopped

  • Zest of 1 lemon

  • 3 cloves garlic, minced

  • Salt & pepper

  • Burger buns

  • Handful of arugula

  • Feta cheese (I like to slice it onto the patty, but you can crumble it)

  • 1 eggplant, sliced widthwise into ~1/2-inch rounds

  • Olive oil

  • Salt & pepper

For the yogurt sauce:

  • 1/2 cup thick Greek yogurt

  • 1 tsp lemon zest

  • 1 tbsp fresh cilantro, chopped

  • 2 cloves garlic, minced

  • 1 tsp olive oil

  • Salt & pepper

INSTRUCTIONS

  1. In a bowl, mix the ground lamb with cilantro, lemon zest, garlic, salt, and pepper. Form into two patties.

  2. Brush both sides of the eggplant slices with olive oil and season with salt and pepper.

  3. Preheat your BBQ (or grill pan). Cook the lamb burgers for about 5 minutes per side, or until cooked through. Grill the eggplant at the same time until tender and nicely charred, about 4–5 minutes per side.

  4. Whisk together the Greek yogurt, lemon zest, cilantro, garlic, olive oil, salt, and pepper until smooth.

  5. Toast your buns if you like. Spread the yogurt sauce, add the lamb patty, grilled eggplant, arugula, and feta. Finish with another spoon of sauce if you’re feeling it.
