Morning Matcha & Pistachio Chia Pudding

Start your day—or treat yourself any time—with this vibrant Matcha & Pistachio Chia Pudding. Creamy coconut milk, nutty pistachios, and earthy matcha combine with chia seeds and yogurt to create a pudding that’s as nourishing as it is beautiful. Top with seasonal fruit, a drizzle of almond butter, or a sprinkle of granola for a satisfying crunch and natural sweetness.

INGREDIENTS

  • 3 tbsp chia seeds

  • 250 ml coconut milk

  • 1/3 heaping cup pistachios

  • 1 heaping tsp matcha powder

  • 2 tbsp maple syrup

  • 5 tbsp plain or coconut yogurt

  • Fresh seasonal fruit (I love peaches), granola, and almond butter, for serving

INSTRUCTIONS

  1. Blend the base:
    In a blender, combine the pistachios, coconut milk, matcha powder, and maple syrup. Blend until smooth.

  2. Combine with chia and yogurt:
    Pour the matcha-pistachio mixture into a bowl. Add the chia seeds and yogurt, stirring until evenly combined.

  3. Chill overnight:
    Cover the bowl and refrigerate overnight (or at least 6 hours) to allow the chia seeds to absorb the liquid and thicken.

  4. Serve:
    Spoon into bowls and top with fresh seasonal fruit, a sprinkle of granola, and a drizzle of almond butter. Enjoy chilled.
