Morning Matcha & Pistachio Chia Pudding

Creamy coconut milk, nutty pistachios, and earthy matcha combine with chia seeds and yogurt to create a pudding that’s as nourishing as it is beautiful. Top with seasonal fruit, a drizzle of almond butter, or a sprinkle of granola for a satisfying crunch and natural sweetness.
INGREDIENTS
3 tbsp chia seeds
250 ml coconut milk
1/3 heaping cup pistachios
1 heaping tsp matcha powder
2 tbsp maple syrup
5 tbsp plain or coconut yogurt
Fresh seasonal fruit (I love peaches), granola, and almond butter, for serving
INSTRUCTIONS
Blend the base:
In a blender, combine the pistachios, coconut milk, matcha powder, and maple syrup. Blend until smooth.Combine with chia and yogurt:
Pour the matcha-pistachio mixture into a bowl. Add the chia seeds and yogurt, stirring until evenly combined.Chill overnight:
Cover the bowl and refrigerate overnight (or at least 6 hours) to allow the chia seeds to absorb the liquid and thicken.Serve:
Spoon into bowls and top with fresh seasonal fruit, a sprinkle of granola, and a drizzle of almond butter. Enjoy chilled.
